What to Decide Before Building an Outdoor Kitchen
Utility runs, covered against open, outdoor-rated appliances and working layout. The decisions that are cheap on a drawing and expensive once it is built.
An outdoor kitchen is mostly plumbing, gas, wiring and structure with a countertop on top. The finishes are the part you look at and the smallest part of the job.
That matters because the decisions split cleanly into two groups. Some are almost free to change while the project is a drawing and very expensive to change once the ground is closed and the island is built. Others can wait. Sort your thinking that way and the planning goes quickly.
Start with what you actually cook
Not what you imagine cooking. What you cooked last month.
Someone who grills a few times a week needs a grill, real counter on both sides of it, cold storage within reach and a place to put a tray down. Someone who smokes a brisket a few times a year needs a different heat source and somewhere to keep it out of the weather. Someone who hosts cares more about serving surface, the sink and the refrigerator than about a second burner.
Write down the three things you will do out there most often. Everything below follows from that list, and an appliance added because it was on a plan is the line item people regret.
Four utility runs, and what each one asks
Every utility starts at the house and has to reach the island. The pipe is the cheap part. Opening the ground is not, and opening it twice is the outcome to avoid.
Gas. A line has to be sized for everything connected to it and for the length of the run, not for the grill alone. Declare every gas appliance you might ever add, including the side burner and the second one you plan to buy later, before the line is sized and buried. Adding capacity afterwards means digging it back up. If you are on propane in a cabinet instead, the compartment has to be vented and sized for the tank, which is a design detail rather than a door you pick at the end.
Water and drain. Supply is straightforward. The drain is the decision, and where the sanitary line happens to run is usually what sets the cost. Ask early whether the jurisdiction for your address permits any alternative, because that answer changes the layout, not just the price. Then design the winter shutdown in rather than relying on memory. The supply needs an isolating valve indoors with somewhere for the trapped water to escape below it, so a cold snap becomes a quick errand. Freezes here are brief and infrequent, which is precisely why the outdoor line is the one nobody remembers, and a split pipe buried inside finished stonework is an expensive repair.
Power. An outdoor kitchen needs more circuits than people expect. A refrigerator wants its own. A hood, an ice maker, a warming drawer or a television each add load, and the receptacles have to be GFCI protected, weather resistant and fitted with in-use covers. Those are code requirements rather than upgrades. Pull one extra empty conduit while the trench is open.
Nothing, on purpose. The cheapest thing you will ever bury is a capped sleeve for something that is not in this project. If a pool, a pergola, a patio cover or landscape lighting is anywhere in the plan, the empty conduit costs very little today and saves cutting a finished slab later.
Covered, open, or under a pergola
This is the one decision that changes the structure rather than the appearance, so it has to be answered first.
Under a solid roof, a built-in grill generally requires a ducted vent hood, and the manufacturer's installation instructions set the minimum clearance between the grill and the ceiling above it. That is a published requirement, not a preference. A hood brings a duct route, a penetration through the roof and its own circuit, and all three are structural decisions made before framing.
Under an open pergola, air moves and a hood is usually not required. Grease still collects on the slats directly over the grill, so either shift the grill out from under them or accept the cleaning.
Fully open is the simplest build and the one that decides how many months of the year the kitchen gets used. Rain, sun in the evening and pollen season all argue for cover. If you have not settled how enclosed this space wants to be, work that question first, because cover, screen or full enclosure changes everything downstream of it.
"Outdoor rated" is a specification, not a marketing word
Appliances built for a kitchen do not survive outside, and the failures are predictable.
A refrigerator listed for outdoor use has a compressor and controls designed for a wide temperature swing. An indoor unit put in an island will run continuously through an Alabama August and fail early, and its documentation will usually tell you outdoor installation is not a covered installation. Read that documentation before you buy rather than after.
Stainless steel is not one thing. Lower grades will show rust freckles outdoors, and the grade is stated in the specification sheet. Doors, drawers and access panels are where water gets in, so look at how they seal and whether the cabinet drains if it does. Anything with electronics wants to sit on the shaded end of the island regardless of its rating, because direct sun on a control panel is what kills them.
Where an appliance sits under a cover, check the required clearance to the structure above it and to combustible material beside it. Those numbers come from the installation manual for the exact model, which is why the appliance list needs to be settled before the island is dimensioned.
Layout is landing space and traffic
The most common regret is not the grill. It is nowhere to put anything down.
Think of the island as three zones: cold and prep, hot, and serve. Cold storage and the sink belong together, the grill needs clear counter on both sides, and the serving surface belongs where guests can reach it without stepping into the cooking zone. A straight run that puts a grill in the middle of a short counter looks efficient on a drawing and cooks badly. An L-shape of the same total length usually gives the cook real elbow room.
Two things to check on foot. Go out at the hour you would be cooking and see which direction the breeze carries, because a grill positioned upwind of your own seating or an open window is a nuisance you cannot move later. Then walk from the back door carrying an imaginary tray and see whether the route puts you through the cook.
Bar seating is where layouts break. Guests seated directly across the grill are in the smoke and in the way. Seating on the return of an L, or on the serving end, keeps people in the conversation and out of the working triangle.

Lighting decides whether it gets used
An outdoor kitchen without lighting is a summer-afternoon kitchen.
Three layers do the work: task light directly over the cooking and prep surfaces, low-level light on steps and the path back to the house, and something soft at the seating so people are not sitting in a spotlight. Put them on separate switches. A single bright fixture over the whole island is the default outcome and the worst one, because it blinds the cook and flattens everything else.
Run the wiring for all three while the trench is open, even if you install fixtures later.
Settle these before anyone draws it
Where the island sits relative to the door and the meter. Covered or open. The complete appliance list, including the ones you will buy later. Which way the smoke goes. Where the water leaves the patio.
Those five are the ones that are cheap now and expensive after the concrete. Everything else, the stone, the countertop color, the door hardware, can be decided while the utilities are going in.
